Very malty, highly alcoholic, "Doppel" or "Double" bock. By German law, any beer with a starting gravity of at least 18 plato (1.072) can be called "Doppelbock" regardless of color. Names end in "ator."
Profile
Full bodied, very malty beer. No hop aroma or flavor. Slight choc/roast flavor OK for darker versions. Low fruitiness, ester and diacytl. Amber to dark brown in color. Low to moderate carbonation.
Ingredients
Pale lager malts, Munich and Vienna malts to achieve desired color. Very little dark malts in dark versions only. German noble hops for bittering only. German lager yeast. Moderate water hardness. Decoction mash.
