Dry hopsMash details:

The chocolate should be mixed with the light malt. However, the patent and roast need to be finely ground (think flour) and added to the top of the mash 30minutes in. This reduces the flavor but give maximum color.

Start mash around 155F to ensure some body.

Hops details:

The calculated IBUs is misleading.  The real number will be higher due to the following:

  • 3.5oz of Cascade are added at 0m
  • Wait ten minutes
  • Add another 3.5oz Cascade and hot whirlpool for 10 more minutes

Dry hops:

  • 5oz Cascade added to secondary
  • Leave at fermentation temps for 5 days
  • Add another 5oz Cascade
  • Cold crash for 5 days
